Overview

A 9-course Sustainable Dinner Experience at JARAS featuring authentic Southern Thai cuisine, locally sourced ingredients, traditional Southern flavors and contemporary culinary techniques. The menu reflects JARAS's habitat-conscious and ecologically pure dining philosophy.

MENU:
  1. Trio Meuk Nam Dum – Squid tart, house-made crispy squid, squid ink sauce and Water Mimosa salad.
  2. Nhang Gai Thod – Crispy organic Tankhun chicken stuffed with fermented Southern Nhang, sorrel and smoked chili dip.
  3. Pak Miang – Melinjo leaves, scallop roe sauce and crispy Pak Miang remnants.
  4. Jor Rang – Charred Phatthalung river prawn with Southern turmeric curry and Chilocostus.
  5. Bak Kut Teh Beef – Smoked Salak-Dai beef short rib, wild mushroom purée, caramelized onion sheet and Bak Kut Teh broth.
  6. Moo Yang Trang – Crispy pork belly sourced from Vor Ta Vee Farm, prepared in authentic Trang style.
