Overview

A 3-course sharing-style dining experience at JARAS featuring Southern Thai cuisine with local Andaman seafood, seasonal ingredients and sustainable cooking techniques. The menu progresses from the first taste of Andaman, through the harmony of Southern Thai cuisine, to a gentle dessert finish from Phatthalung.

Course 1 – Habitat-Conscious: The First Taste of Andaman
  • Miang Phuket Scallop – Fresh local scallops with crispy Water Pennywort, wild herbs, house-made Miang sauce and Chilocostus.
  • Yum Som O Tubtim Goong Yang – Grilled Andaman tiger prawns with pomegranate, pomelo, coconut milk, roasted coconut, crispy shallots, cashew nuts and red onions.
  • Tom Som Pla – Clear Southern soup with Songkhla turmeric, fresh daily catch, Patthalung chives and Malabar tamarind leaves.
Course 2 – Southern Thai: The Harmony of Southern Thai Cuisine
  • Poo Nim Khai Kem – Suratthani soft-shell crab with salted egg sauce, lemon gel, cured egg yolk and Water Pennywort.
  • Look Chok Southern Yellow Curry – Fresh seasonal Andaman fish with lotus root, bitter leaves, potato, caramelized shallots and fermented Look Chook from Phang Nga.
  • Organic Phuket Pad Pak Miang Goong Seab – Young Malinjo leaves stir-fried with Phuket dried shrimp, crispy garlic and oyster sauce.
Course 3 – Ecologically Pure: The Gentle Finish from Phatthalung
  • Phatthalung Sago – Chewy Phatthalung sago pearls with house-made coconut ice cream, cured egg yolk, salted crumble and Phuket cacao chocolate.
